Bruschetta with Tomato Basil Topping Bruschetta with Tomato Basil Topping
This Italian classic originated in central Italy. Basic bruschetta is grilled bread rubbed with garlic and topped with extra virgin olive oil, salt and pepper. Here, tomatoes, basil, balsamic vinegar and parmesan cheese are added.
SERVES: 8
PREP TIME: 5 Minutes
COOK TIME: 15 Minutes
Ingredients

1 Baguette
1 tsp. Olive Oil
2-3 cloves Garlic
1 can diced Tomatoes
1 Tbsp. Basil, julienned

2-3 cloves Garlic, chopped
1 Tbsp. Balsamic Vinegar
1Tbsp. Olive Oil
Parmesan Cheese shavings

Directions
Step 1  Bruschetta:
Slice the loaf of bread into 1/2-inch slices and place on a cookie sheet. Drizzle the bread slices with olive oil and rub each slice with a clove of fresh cut garlic. Place bread in oven on sheet pan and broil until golden brown on both sides.
 
Step 2  Bruschetta Topping:
Drain one can of tomatoes, chop or dice, if needed, and place in a medium mixing bowl. To the tomatoes add: julienned basil, 2 or 3 finely chopped cloves of garlic, 1 Tbsp balsamic vinegar and 1 Tbsp olive oil. Season with salt and pepper to taste and mix well. When the bruschetta is ready, top each slice with a spoonful of the topping and fresh shaved parmesan pieces.
